Leg of Alpaca
Like the shoulders, the legs of an alpaca work hard which means that this cut also good, strong flavor. Leg of alpaca is great roasted whole on the bone, or boned and barbecued or grilled. It’s a really lean muscle, so take care not to overcook it or else it will end up dry. Rub it all over with a herb oil, some garlic and roast in the oven. Finish on the grill to get a great smoked flavor. This is a great one for a weekend spent with family or when entertaining a big group.
