This part of the alpaca works hard, so the meat from an alpaca’s shoulder is full of flavor. To maximize the flavor, cook the alpaca shoulder on the bone so the meat simply falls apart when pulled with a fork. It takes a while to become tender which means this cut is a great choice for stewing and slow-roasting. Braise high heat on the stove, flat top or grill before slow cooking in dutch oven, crock pot or oven for 6-8 hours. This cut is great for group dinners and family meals.
